Why is Sub-bass from an enclosure more audible from outside the ...

Theoretically yes having a sealed cabin and completely open trunk would have more "infinite", in your infinite baffle setup but it won't really increase your efficiency that much. Infinite baffles traditionally act more like extra large sealed boxes, and as with sealed boxes the bigger you go the more efficienct you get, up to a point, past about 5 times Vas you don't get increases in efficiency as much as you simply get a shallower low frequency roll off.

Doing experiments in my car to find out the resonant frequency of my entire cabin, which is right around 7 hz as determined by opening one rear window at highway speeds and experiencing the Helmholtz resonance I could figure that an IB setup using a true infinite rear baffle, ie open trunk, the subwoofer should play cleanly down to 7 hz since below that then the car cabin starts acting like a sealed box vs a true infinite baffle.

The trunk though, when closed will have its own resonance and since it's smaller it's going to be higher, but in reality its probably something like 20 hz or so. You can easily test this by simply putting the sealed box and playing low pitched test tones until you hear a peak. In my previous car this was at a surprisingly low 18 hz. So really since you're not playing 7-18hz test tones increasing the box size in an "infinite" baffle arrangement doesn't do you really any good. The biggest gains to be had then would be instead of increasing box size, to increase the soundproofing of your trunk. You could increase soundproofing of your cabin but as soon as you open your window that goes all out the door so to speak. Basically a true infinite baffle system simply absorbs all the sound waves coming from the rear of the speaker so that it can't interfere and cancel out with the front wave.
